People have been wanting this recipe for a while because the monster cookie is one of our most legendary vegan treats: chewy delicious cookies with chocolate chips, pretzel chunks, peanuts, and vegan marshmallows!
This recipe makes roughly 30 cookies.
Ingredients:
1 ½ cups brown sugar
¾ cups white sugar
4 ½ cups all purpose flour
3 TBSP tapioca flour
½ TBSP baking soda
½ TBSP salt
1 ¼ cups sunflower oil
¾ cups non-dairy milk
1 ½ TBSP vanilla extract
1 ¼ cup chocolate chips
1 cup of crushed pretzels
½ cup of peanuts
¾ cup Dandies Vegan Marshmallows (Mini-Size)
Directions:
In mixing bowl combine all purpose flour, baking soda and salt; set aside
Combine sugars, oil, almond milk and tapioca flour in a bowl or your mixer and mix well for 2 minutes or until combine, then add in vanilla and mix until combined.
Add in flour mixture, mix well until combined.
Stir in chocolate chips, pretzels, and peanuts.
Add the marshmallows last, stir in but be careful not to over mix to avoid tearing the marshmallows.
Chill dough
Preheat oven to 350°
Use spoon to ball dough and place onto a lined oven sheet
Push down on each cookie and finish with a pinch of sea salt on top (optional)
Bake for 12 minutes, rotate oven sheet after 6 minutes
Allow 10 minutes for cookies to cool, and then enjoy!
