People have been wanting this recipe for a while because the monster cookie is one of our most legendary vegan treats: chewy delicious cookies with chocolate chips, pretzel chunks, peanuts, and vegan marshmallows!
This recipe makes roughly 30 cookies.
Ingredients:
- 1 ½ cups brown sugar 
- ¾ cups white sugar 
- 4 ½ cups all purpose flour 
- 3 TBSP tapioca flour 
- ½ TBSP baking soda 
- ½ TBSP salt 
- 1 ¼ cups sunflower oil 
- ¾ cups non-dairy milk 
- 1 ½ TBSP vanilla extract 
- 1 ¼ cup chocolate chips 
- 1 cup of crushed pretzels 
- ½ cup of peanuts 
- ¾ cup Dandies Vegan Marshmallows (Mini-Size) 
Directions:
- In mixing bowl combine all purpose flour, baking soda and salt; set aside 
- Combine sugars, oil, almond milk and tapioca flour in a bowl or your mixer and mix well for 2 minutes or until combine, then add in vanilla and mix until combined. 
- Add in flour mixture, mix well until combined. 
- Stir in chocolate chips, pretzels, and peanuts. 
- Add the marshmallows last, stir in but be careful not to over mix to avoid tearing the marshmallows. 
- Chill dough 
- Preheat oven to 350° 
- Use spoon to ball dough and place onto a lined oven sheet 
- Push down on each cookie and finish with a pinch of sea salt on top (optional) 
- Bake for 12 minutes, rotate oven sheet after 6 minutes 
- Allow 10 minutes for cookies to cool, and then enjoy!
