Monster Cookie

People have been wanting this recipe for a while because the monster cookie is one of our most legendary vegan treats: chewy delicious cookies with chocolate chips, pretzel chunks, peanuts, and vegan marshmallows!

This recipe makes roughly 30 cookies.

Ingredients:

  • 1 ½ cups brown sugar

  • ¾ cups white sugar

  • 4 ½ cups all purpose flour

  • 3 TBSP tapioca flour

  • ½ TBSP baking soda

  • ½ TBSP salt

  • 1 ¼ cups sunflower oil

  • ¾ cups non-dairy milk

  • 1 ½ TBSP vanilla extract

  • 1 ¼ cup chocolate chips

  • 1 cup of crushed pretzels

  • ½ cup of peanuts

  • ¾ cup Dandies Vegan Marshmallows (Mini-Size)

Directions:

  • In mixing bowl combine all purpose flour, baking soda and salt; set aside

  • Combine sugars, oil, almond milk and tapioca flour in a bowl or your mixer and mix well for 2 minutes or until combine, then add in vanilla and mix until combined.

  • Add in flour mixture, mix well until combined.

  • Stir in chocolate chips, pretzels, and peanuts.

  • Add the marshmallows last, stir in but be careful not to over mix to avoid tearing the marshmallows.

  • Chill dough

  • Preheat oven to 350°

  • Use spoon to ball dough and place onto a lined oven sheet

  • Push down on each cookie and finish with a pinch of sea salt on top (optional)

  • Bake for 12 minutes, rotate oven sheet after 6 minutes

  • Allow 10 minutes for cookies to cool, and then enjoy!
