Fried Rice + General Tso’s Tofu

Lightly fried brown rice with egg tofu, carrots, corn, peas, scallions & sesame seeds. Topped with fried tofu and smothered with our vegan take on the classic Chinese/American sweet & tangy sauce.

Fried Rice

Ingredients:

2 cups chilled, cooked rice

1⁄3 cup frozen peas 1⁄3 cup frozen corn

1⁄3 cup matchstick carrots

1⁄2 yellow onion diced

1⁄2 tsp tamari (soy sauce)

2 tsp sesame oil 1 bunch scallions chopped for garnish Sesame seeds for garnish 

1⁄4 cup Tofu Egg:

2 blocks of extra firm tofu

1⁄4 c nutritional yeast

1.5 tsp black pepper

1 TBSP curry powder

1 TBSP turmeric

1 TBSP black salt

2 TBSP oil 

Crumble the blocks of tofu by hand. Add in all other ingredients after tofu is crumbled. Mix by hand to combine.

Directions:

-Combine all of your vegetables in a bowl and toss them in a teaspoon of sesame oil.

-Heat up a wok, or any large stir fry pan, to high heat and add another teaspoon of sesame oil to the pan. Toss in your vegetable mixture, stir until the vegetables have a nice char on them and the onions have softened.

-Then add rice with 1⁄2 teaspoon tamari. Stir to prevent burning.

-Lastly add your tofu egg and stir until everything is hot. The rice will start to stick to the wok. That’s ok! Just keep scraping it off the wok and stirring. It’ll add a full flavor and extra texture.

-Top with scallions and sesame seeds.

General Tso’s Sauce

Ingredients:

2 TBSP sesame oil

2 TBSP minced garlic

2 TBSP minced ginger

1⁄4 cup tomato paste

1⁄2 cup tamari

1⁄4 cup rice vinegar

1⁄2 cup white sugar

1⁄4 cup brown sugar

1⁄4 cup maple syrup

1 TBSP red chili flakes

1 1⁄2 cup Not Chicken broth

Slurry:

1⁄4 cup cornstarch

1⁄4 cup cold water

Directions:

-In a saucepan, heat sesame oil over medium/high heat. Add the garlic and ginger, cook down for 1-2 minutes.

-Add the tomato paste, tamari, rice vinegar, sugar, brown sugar, maple syrup, chili flakes and broth to saucepan. Bring up the heat and bring to a boil while stirring frequently.

-Once you have a boil going, add your cornstarch and cold water slurry mixture. Stir this in well and start reducing your heat down to low. Let it get to a simmer for about 10-15 minutes while frequently stirring. It should start to thicken while you are stirring and simmering.

-Take the sauce off the heat and enjoy with some crispy tofu and fried rice or poured over some cauliflower wings!

Note: After you have cooled the sauce down, it will have congealed quite a bit. All you have to do is heat it up by whisking in a little hot water at a time in a saucepan over medium heat. It should be just as good as the first time around!
